This Skill Set applies to individuals who work as Food Safety Supervisors (Level 1 & 2 combined) responsible for overseeing the day-to-day implementation of the food safety program across the entire organisation, process or food handling area in the Community and Health Service sector. 

This course provides the skills and knowledge to control food safety in the workplace and support colleagues to implement the food safety program in their roles. It covers the basics such as personal health and hygiene requirements, critical temperatures and time limits to keep food safe, cleaning and sanitising procedures and safe food handling techniques from receipt of goods through to food service.


Students will also learn how to monitor food safety requirements, develop, revise and implement procedures to support food safety control and prevent breaches. Students will also learn to report and investigate food recalls or complaints relating to food safety and take corrective action when required, especially in the community and health sector.

The following unit(s) will be awarded to successful participants in this course. The certificate will be issued by Allens Training Pty Ltd – RTO 90909.

HLTSS00061 - Food safety supervision skill set - for community services and health industries.

HLTFSE001 - Follow basic food safety practices.

HLTFSE005 - Apply and monitor food safety requirements.

HLTFSE007 - Oversee the day-to-day implementation of food safety in the workplace.


IMPORTANT INFORMATION PRIOR TO ENROLMENT

  • COURSE DELIVERY

    This course can be delivered/assessed in the workplace or at facility organised by the training provider.

  • ENTRY REQUIREMENTS

    • Physical capability to be able to meet the demands of the practical demonstration skills 
    • Visual acuity to identify food hazards as well as clean and sanitise equipment and materials
    • Follow personal hygiene requirements including wearing appropriate flat, enclosed, rubber soled shoes for comfort and safety, long hair should be tied back and all unnecessary jewellery removed.

    Please note: if your role does not involve working with vulnerable people but you are required to complete a Food Handler or Food Safety Supervisor course, the following Skill Set may be more applicable to your needs: SITSS00069 - Food Safety Supervision Skill Set


    IMPORTANT: A NSW FSS certificate will not be issued upon completion of this Skill Set. If you work in NSW and require a NSW FSS Certificate, we recommend you complete the NSW Food Safety Supervisor course. 


    Online study options:  The online learning program can be found in the student portal. Students must have access to a computer, smart phone, tablet or other electronic device with access to the internet to complete the online studies and practical assessment.

  • COURSE DURATION


    • Refresher minimum duration: 8 hours
    • Face-to-face minimum duration: 13.5 hours
    • Online with face-to-face minimum duration: 3.5 hours
  • ASSESSMENT REQUIREMENTS

    Individuals undertaking this course will be expected to complete both written and practical assessment tasks.

  • CERTIFICATE RENEWAL REQUIREMENTS

    This certificate has an industry recommended renewal period of 60 months (5 years).

  • ASSESSMENT ACTIVITIES

    Performance tasks:

    • Follow hygiene procedures 
    • Follow food disposal procedures
    • Report unsafe hygiene practices
    • Use two (2) different monitoring methods to identify unsafe food items
    • Identify two (2) unsafe food practices and implement corrective action
    •  Communicate food safety requirements to two (2) new employees •    Identify two (2) food safety breaches, update the relevant procedure, and communicate the changes to colleagues
    • Investigate two (2) food safety complaints, implement appropriate corrective controls and communicate the changes to colleagues

    Documentation:

    • Food Safety Plans
    • Incident Reports

    Theory assessment: a written assessment consisting of multiple choice and short answer questions. All questions must be completed.
